In the presence of amazing weather I’ve been doing some garden work outside. My tomato and cucumber plants already smell like tomatoes and cucumbers! I’m so excited! They seem to be recovering from a ridiculous doze of fertilizer I used on them just a couple of days ago. Why ridiculous? Because I kind of tend to over-love things a bit.
Juicy lettuce and spinach are showing their little faces and getting ready for my salad bowls.
You know what else warm weather is famous for? BBQ my friends!
Today I’m going to share with you my new BBQ obsession called Bacon Wrapped Onion Rings! Juicy onion wrapped in crispy smoked bacon covered in glossy teriyaki glaze sizzling on the grill! OBSESSED!

Ingredients:
2 medium sweet onions
12 slices of bacon
2 tbsp teriyaki sauce
Peel the onions and cut them in 1 inch rings. Pick the bigger slices and separate them by 2 rings together. Then simply wrap bacon around the onion rings. I have bacon from the farm and I find it is a bit thicker than the store bought one so I had to secure the bacon with wooden skewers. Also, feel free to cut the bacon strips in half lengthwise.
Fire up the grill on medium heat. Place bacon wrapped onion rings on the hot grill for 25 minutes. You will need to flip them over couple times to make sure they don’t burn from that bacon juice dripping on the fire.
After 25 minutes apply teriyaki sauce on both sides and grill for another 15 minutes and keep an eye on the sauce to make sure it doesn’t burn.
The onions should be soft and sort of melted inside the bacon.

- few wooden skewers (optional)

- Wrap bacon around onion rings. If bacon slices are too big, feel free to half them lengthwise. Secure with wooden skewers if necessary.

- Serve with more teriyaki glaze.

You are not kidding when you say that onion melts in your mouth. I wish I bought more bacon though. I had to hide them in my microwave so we wouldn’t eat them like chips.
