Time to jump on this whole chia seed bandwagon.
CHIA SEEDS!? Where have you been all my life? Sometimes I think I live under a rock.
Actually, I know where they have been. They’ve been sitting in my kitchen cupboard patiently waiting for these insanely delicious Coconut Chia Snack Bowls, which are nothing other than a friendly dose of protein, nutrients, and a great dash of superfoods. This might be my favourite snack of all times. And yes, this means that I actually do eat snacks other than Nutella cookies and doughnuts…….
Not that I have any problem with that.
Did you guys know that chia seeds are truly one of the coolest and craziest ingredients? They’re crunchy and cute and can be sprinkled on just about anything. And when combined with liquid they plump up and become soft, gelatinous and pudding like. And then bonus – they’re healthy too! Actually, they’re more than healthy, they’re like superfood status healthy. These tiny seeds are packed full of protein and healthy O-mega 3’s making them a perfect addition to any breakfast or snacks.
So, if you’re not familiar with chia seeds yet, then this weekend would be the perfect time to familiarize yourself. Because tomorrow is Saturday and I know you would really love to make a fast and healthy breakfast to start your day right. Or, perhaps, have a fun snack during those hungry hours between brunch and dinner, but you also have a major nap on the agenda so time is limited. Think no further, go get the chia seeds, soak them in some good coconut milk overnight and make these coconut chia snack bowls.
These bowls are jam-packed with superfood bits like chia seeds, bee pollen, hemp seeds, coconut, honey and berries!
Here Is How To Make Coconut Chia Snack Bowls
Mix the coconut milk and chia seeds together with a dash of vanilla, salt and honey. Let the chia seeds soak for a bit so that they can absorb the liquid and become plump. For the creamiest results I let them chill overnight, but honestly, sometimes I only wait for a few hours and the seeds are already thick enough to eat. It’s like magic!
To finish these bowls, I blended some fresh berries into the chia seed pudding, creating 3 different flavours in one bowl. And topped them with coconut flakes, bee pollen, hemp seeds, and more berries. DELISH.
And you can totally top these with whatever you want. I just went with my favourite combos. Oh, and if you’re wondering about that frosted look on the berries – it’s pretty easy to do. Simply put them in the freezer for 10-15 minutes and when you’ll take them out they will develop the frosted look on top in a few minutes. The trick is in freezing dry berries, so make sure not to wash them before freezing.

Coconut Chia Snack Bowls
Ingredients
- 1 can coconut milk
- 1 tbsp honey or maple syrup
- 1 tsp vanilla extract
- pinch of salt
- 4 tbsp chia seeds
Suggested Toppings
- fresh berries
- hemp seeds
- shredded coconut
- freeze dried berries powder
Instructions
Coconut Chia Pudding
- Whisk coconut milk vigorously so there’re no lumps. Add honey, vanilla extract and salt. Whisk to combine.
- Add chia seeds and stir well. Allow coconut milk-chia seed mixture to soak until thickened, at least 30 minutes, or cover bowl with plastic wrap and refrigerate overnight for best results.
Suggested Serving
- Once chia seeds pudding is chilled, divide it into 3 small bowls, leaving one bowl with plain vanilla pudding, and adding some mashed or blended berries in two other bowls. I added raspberries and blackberries in mine.
- Top with fresh berries, bee pollen, hemp seeds, star fruit, shredded coconut and freeze dried blueberries powder.
- To get the frosted look on berries, simply put them in the freezer for 10-15 minutes and when you’ll take them out they will develop the frosted look on top in a few minutes. The trick is in freezing dry berries, so make sure not to wash them before freezing.
