I know we’re all occupied in enjoying the last long weekend of summer, so I won’t keep you for long. Just long enough to tell you that I’m absolutely obsessing over these creamy nectarine popsicles that I created.
These beauties are layered with fresh nectarine puree and yogurt mixture. Unlike the store-bought sugary pops these homemade nectarine popsicles are good for you. They are only lightly sweetened with honey and vanilla and they will make your mouth sing!
There’s just enough time to whip up some of these pops and enjoy them at your Labor Day festivities and if you make them tonight, they will be ready for you to enjoy tomorrow!
HOW TO MAKE EASY CREAMY NECTARINE POPSICLES
Making your own homemade ice pops is so easy. The hardest part is waiting for them to actually freeze, but the rest is so simple! If you have children they’ll be thrilled when they see these coming, and you’ll feel fantastic serving something healthy and fun at the same time.
I love making popsicles with fresh fruit like nectarines or peaches, especially if they’re ripe, sweet and juicy. Just add the fruit chunks to a blender and puree. Meanwhile combine yogurt with a touch of honey and vanilla and we are ready to layer our popsicle molds!
In case you don’t own an ice pop mold already here are my favourites:
Layer yogurt and puree into ice-pop molds , ending with yogurt. Then take a bamboo stick and stir a little in each mold.
These popsicles turn out so creamy and I love how each pop turns out differently with unique swirls and dots of nectarines. It’s so easy to do and the result is so awesome!
Creamy Nectarine Popsicles
Ingredients
- 6 ripe nectarines
- 2 cups plain yogurt
- 2 tbsp honey
- 1 tsp vanilla extract
Instructions
- Pit nectarines, place them in a blender and puree.
- In a medium bowl mix yogurt with honey and vanilla.
- Layer yogurt and nectarine puree into ice-pop molds. Finish last layer with yogurt.
- Take a long skewer, stick and swirl a little in each mold.
- Add the popsicle sticks and freeze for at least 6 hours before enjoying.
