Really simple Hoisin Salmon Rice Bowls. And super healthy. And deliciously delicious.
This Hoisin Salmon Rice Bowls recipe came to me after almost ten days of straight up ignoring my kitchen. This is how I make the recipe magic happen, see? Laziness has its perks, in the form of Hoisin salmon over freshly steamed rice and colourful veggies. First I was on vacation, then I was tired, then there were leftovers in the fridge… so many excuses as to why I had to spend my nights on the couch and absent-mindedly scroll through Instagram instead of ACTUALLY cooking food.
Simple. Healthy. Delicious.
So beyond shadow of doubt, this week is all about simple, healthy, and delicious back-to-it cooking routine. Because look what kind of caramelized salmon glory we were missing out on.
There’s just something about food – any food, including but not limited to meat or fish and vegetables – when browned becomes sweet and develops into some kind of caramelized dream. That will never make me stop eating. It’s regular food meets candy meets me drifting on food lovers’ cloud nine.
This recipe one of my most obnoxiously crazy, out of control, too many things all in one bowl but SO GOOD food creations of 2018. It should probably be called, in it’s truest deepest most honest self –> Hoisin Salmon Rice Bowls with roasted red peppers, cucumbers, mango, cherry tomatoes, and radishes. But your mouth has better things to be doing than saying that long jumble of a food name, such as eating said food, so we’ll just say Hoisin Salmon Rice Bowls and know that all those other yums come included.
Hoisin Salmon Rice Bowls
Ingredients
Hoisin Salmon
- 6 medium salmon fillets skin on
- 1/4 cup Hoisin sauce
- 1/2 cup soy sauce
- 1/2 cup water
- 1 tbsp ginger grated
- 1 tsp minced garlic
- 2 tbsp honey
- toasted sesame seeds
- 1 tbsp sesame or peanut oil
Bowls Assembly
- steamed rice
- roasted red peppers
- slices of radishes, cucumbers, mango, cherry tomatoes sliced
- cilantro and scallions for garnish
Instructions
- Wipe dry salmon fillets and brush with honey on all sides.
- In a bowl whisk together Hoisin sauce, soy sauce, water, ginger, garlic and remaining honey.
- Heat a large non-stick skillet over medium-high heat. Add the oil. Once the pan is hot add the salmon skin side down. Sear for 2-3 minutes or until the skin is crisp. Using tongs carefully flip the filets and cook for another 2 minutes or until caramelized. Carefully remove the salmon onto a plate.
- Add the hoisin mixture into the pan and bring to a boil. Reduce the heat to medium and cook for 3-5 minutes or until reduced by half.
- Add the salmon into the pan skin facing up. Cook for 2 minutes and serve over steamed rice. Sprinkle with toasted sesame seeds and drizzle with sauce.
- Serve alongside the veggies and eat!
