During the colder months I crave some comfort food. And since breakfast is my favourite meal of the day, having a comfort meal for breakfast seems like an obvious choice. This Instant Pot Millet Porridge with Baked Milk is super cozy and perfectly healthy too! It is rare that cozy meals are healthy, but since millet is naturally gluten-free and pretty easy on the stomach, this time it is.
A while ago, when my friend Julia from Imagelicious sent me her The Ultimate One-Pan Oven Cookbook, I couldn’t wait to explore her recipes that aim to inspire and empower people to create joy through cooking. The whole book is dedicated to meals that can be completely cooked in just one pan. It features over 70 recipes that I couldn’t wait to work my way through.
Choosing the first dish was difficult as there are so many great options to try, but I finally settled on this beautiful Millet Porridge. It is using an ingredient that I remember from my childhood – baked milk! Have you ever tried it? It is a really fun and unique beverage that is so easy to make yourself!
HOW TO MAKE BAKED MILK
Simply pour the milk into a regular stainless steel ovenproof pot, bring the milk to boil on the stovetop, then place the pot into the oven to cook for a few hours until it thickens and caramelizes. While it bakes, it will develop a thick and very brown skin. Don’t worry, you can just discard it after, then strain the milk and enjoy it warm or cold! We love adding it to porridge, oatmeals, cereals or just drink it as is, it’s delicious!
I loved how in her book Julia suggested to incorporate baked milk into one of my favorite breakfast porridges. Millet requires a long cooking time, but with the help of Instant Pot you can enjoy this healthy and delicious meal in 10 minutes.
How to Cook Millet Porridge in the Instant Pot
Cooking ratio: 1 part millet : 1 ¾ parts water.
Cooking time: 10 minutes.
Quick release
That’s all you need to know. This recipe doesn’t require toasting raw millet or soaking it, all you have to do is dump and start!
Once the millet is cooked add some baked milk to make it creamy, a bit of butter and serve warm with your favorite toppings. I love how the fruity tang of cranberries and the spicy warmth of cinnamon pair together in this most perfect breakfast for a chilly morning!

Ingredients
Baked Milk
- 2 cups whole milk
Instant Pot Millet Porridge
- 1 cup millet
- 1 3/4 cup water
- 1 tbsp granulated sugar
- pinch of salt
- 1 tbsp butter
Toppings
- dried cranberries, pecans, honey, cinnamon
Instructions
Baked Milk
- Preheat the oven to 325 F. While the oven is preheating, pour the milk into a stovetop and ovenproof pot. Bring the milk to a boil, and then place the pot into the fully preheated oven.
- Bake uncovered for 2 1/2 to 3 hours. Then turn the oven off and let the milk cool in the oven until warm, about 1 hour.
- Once the milk is baked, it will be covered by a thick and very brown skin. You can just discard it. Strain the milk and enjoy.
Instant Pot Millet Porridge
- Add millet, water, sugar and salt into the Instant Pot and set the pressure cook mode for 10 minutes.
- Quick release, fluff with the fork and add butter. Pour the baked milk a little at a time, to reach the desired creamy consistency.
- Garnish with your favorite toppings and enjoy!
