Who’s down with Friday night Nachos?!
More specifically, Loaded Cheeseburger Nachos with saucy ground beef, homemade real food cheese sauce and topped with all the delicious things like tomatoes, pickles, bacon, lettuce and red onions! I know, I know it’s kind of a lot, but they are nachos, so LOADED is exactly what you’d expect.
When your cheeseburger nachos are presented in a drippy wonderfulness, THEN YOU KNOW that these are your perfect nachos.
Let’s start by saying that this platter of loaded cheeseburger nachos is taking notes from my favourite burger flavours. I had been tossing this idea around in my head and wasn’t quite sure how to execute it till I did some serious thinking. I didn’t want to present you with same old ground beef and store bought Doritos nacho cheese. No judgement on store bought cheese sauce, it’s powerful stuff, but I wanted silky smooth cheese sauce with cheeseburger flavours in it. So I came up with my homemade nacho cheeseburger sauce.
But pinkie promise it’s not even hard.
I used this recipe for cheese sauce. This method shows how evaporated milk + cheese + cornstarch combo produces the most silky smooth nacho sauce ever. At the end I added some cheeseburger flavours to the sauce, like pickle relish and french dressing.
Then I quickly browned some ground beef with a handful of spices and was ready to rock my nachos!
Here’s How The Nacho-Makeage Goes:
Layer half of the chips on the baking pan, drizzle some silky smooth homemade nacho cheeseburger sauce on top.
Top with half of ground beef, grated cheese and cover with remaining chips. Drizzle more cheese sauce on top, would ya?
The rest is sort of a buffet of options. Tomatoes, pickles, iceberg lettuce and red onions are kind of what I most recommend as the final layering touches, but it’s up to you. Scallions, bacon or more bacon, jalapeños for heat, it’s your call.
And there you go, the ultimate comfort food, game day food or just, “man, I really need some cheese and carbs food”.
Loaded Cheeseburger Nachos
Ingredients
- 1 tbs olive oil
- 1 medium yellow onion chopped
- 3 garlic cloves minced
- 1 lb ground beef
- 2 tbsp tomato paste
- 1 tbsp yellow mustard
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 tsp dried oregano
- 1 tsp paprika
- 1 tsp ground cumin
Nacho Cheeseburger Sauce
- 1 1/2 cup shredded cheddar cheese
- 1/2 cup Monterey Jack cheese
- 1 tbsp corn starch
- 1 (12 oz) can can evaporated milk
- 1 tsp or to taste hot sauce
- 4 tsp pickle relish
- 4 tbsp French dressing
Nachos
- 1 bag tortilla chips
- 2 cups grated Cheddar cheese
- few sliced of bacon cooked and crumbled
- sliced pickles
- iceberg lettuce
- cherry tomatoes sliced
- red onion finely chopped
- scallions sliced
Instructions
Beef
- Heat oil in a skillet over high heat. Add onions and cook until soft, add garlic and cook for few more minutes. Add beef and stir breaking it up as you go. Once beef is no longer pink add tomato paste and yellow mustard. Stir until incorporated.
- Add all the seasonings and cook for another minute or two. Set aside.
Nacho Cheeseburger Sauce
- In a medium saucepan toss together the cheese with cornstarch. Put the saucepan over low heat and add evaporated milk and hot sauce. Cook stirring constantly with whisk until melted, bubbly, and thickened (about 5 minutes). Remove from heat.
- Add pickle relish and french dressing. Stir to combine.
Nachos
- Preheat oven to 350 F.
- Spread half of the tortilla chips in a single layer on a baking pan.
- Drizzle over about 1 cup of nacho cheeseburger sauce.
- Top with 1/2 of beef and 1/2 grated cheese.
- Spread over remaining chips – sauce – beef – grated cheese and bake for 15 min or until the sauce is melted.
- Serve immediately garnished with pickled, iceberg lettuce, cherry tomatoes, red onion and scallions.

Looking at the ingredients you have used for the cheese burger sauce, it tells me that it must be really delicious. Great recipe, very yummy! Any suggestions for other ways to use the left over Miso paste? Marinade? Make into another type of sauce? Ideas??? It’s too good to not use up!

I think the size of chicken breasts has changed dramatically since Julia Child’s day, which could account for some of her shorter cook time.

I will have to look for one of those grill pans, as I eat a lot of chicken. During the warm months I do use a gas grill outside, but have been using a Forman grill in winter. I have found that it will make nice grill marks, but to cook all the way through, wind up with burned grill marks. I never considered just a quick grilling to get the marks and finishing up in the oven. Thank you for the post. now I won’t have to use ketchup to give my chicken a little moisture when I eat it.
